Buckeyes

Ingredients

  • 1 1/2 cups peanut butter
  • 1 cup butter, softened
  • 1/2 teaspoon vanilla extract
  • 6 cups confectioners’ sugar
  • 4 cups semisweet chocolate chips

Directions

  1. Mix the peanut butter, butter, vanilla, and confectioners’ sugar. The dough will look dry. Roll into 1-inch balls on a waxed-paper-lined baking sheet.
  2. Press a toothpick into each ball and freeze until firm, about 30 minutes.
  3. Melt the chocolate chips in a double boiler, stirring frequently until smooth.
  4. Holding the toothpick, dip each ball in chocolate, leaving a small circle of peanut butter visible at the top.
  5. Return to the baking sheet and refrigerate until ready to serve.

Notebook note: the original version was very sweet.
