Collard Greens

1 tablespoon olive oil

3 slices bacon

1 large onion, chopped

2 cloves garlic, minced

1 teaspoon salt

1 teaspoon pepper

2-1/2 cups and 1 tablespoon chicken broth

1 pinch red pepper flakes

1 pound fresh collard greens, cut into 2-inch pieces

Directions

  1. Heat oil in a large pot over medium-high heat. Add bacon and cook until crisp. Remove, crumble, and return it to the pan.
  2. Add the onion and cook until tender, about 5 minutes. Add the garlic and cook until fragrant.
  3. Add the collard greens and cook until they begin to wilt.
  4. Pour in the broth and season with salt, pepper, and red-pepper flakes.
  5. Reduce the heat to low, cover, and simmer for about 45 minutes, until tender.
