Swedish Pancakes
Ingredients
- 4 cups sifted whole-wheat flour
- 12 eggs
- 1 cup brown sugar
- 6 cups milk
- 2 teaspoons salt
- Oil — the amount is unclear on the original recipe card
Instructions
- Break the eggs into a large mixer bowl and add the oil.
- Add salt to the flour, then sift the flour into the egg mixture.
- Add the brown sugar and about ½ cup of the milk. Mix on low until smooth.
- Add the remaining milk while mixing, scraping the thick mixture from the bowl so everything is incorporated.
- Mix on medium-high for one minute.
- Lightly oil and preheat a griddle. Pour on about ⅓ cup batter and rotate the griddle to spread it evenly.
- Cook until the pancake holds together, flip, and cook the other side to the desired doneness.
Serve plain or rolled with syrup, jam, powdered sugar, or honey. These are also good cold or reheated.
